La Petite Maison's Bikini – The Method

We present a simplified version of a cocktail from a new menu. Designed as a party-sized prepared mix that's loaded with essence of the Christmas time, making it perfect for hosting a holiday party. Any leftover cordial to use in breakfast cocktails, puddings, or for additional servings of bikinis.

Bikini

Makes enough for 10 people

To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place the listed components into a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Next, take off the burner and leave to cool fully. Decant into an sealable bottle, seal keeping it in the refrigerator, it can be stored for around four weeks.

Preparing the Premix: Pour all the liquid ingredients into one sizeable container, let it rest for an hour, then pass it through preferably using muslin, to ensure it's perfectly clear.

When ready to serve: Pour 85ml of your cocktail base into your cocktail shaker filled with ice, and agitate gently for a minute to chill. Pour to a chilled martini glass or a similar vessel, garnish with a few cranberries and finish using a brief mist with the mandarin essence above the glass.
